Hi! We’re Libby and Jeffrey.

This blog is about sharing delicious food that is gluten-free. I truly believe that any food you crave that contains gluten can be made just as good when it’s gluten-free. We like a variety of food and we like to try new things. I only post recipes that I love and work for any cooking ability.

Gluten-Free History

When I, Jeffrey, was 18 my mom had an autoimmune disease that changed her diet completely. While she was recovering, I started to learn how to cook to help out my family. Up until that point, I had only known how to cook a box of macaroni and cheese. The first recipe I made was apple crisp. I think I choose it because it was easy and it was a dish that my mom would make often. It was comfort food. From then on my love for cooking grew.

Soon after my mom’s autoimmune disease, we discovered that not only she had an intolerance to gluten, but her body was also intolerant to soy and yeast as well. That was my first introduction to gluten-free cooking and have learned so much since then.

The Gluten-Free Bite’s Goal

Our goal for this blog is to give those on a gluten-free diet, recipes that are easy to follow and delicious. Whether you are just starting out on your gluten-free journey or you are making a meal for a friend, welcome and we hope to see you again. We also set out to research foods to answer your questions if it is gluten free or not.
